Tai Hing Roasted Goose







Tai Hing has been running the Roasted Goose and Char Siu for many year in Tsuen Wan, right beside Wing Wah Lap Cheung. They moved to the corner just opposite Standard Chartered Back as a Tai Pai Tang operation,
From our side, you can see a very clean and beautiful window displaying those Roasted Goose and Char Siu, Roasted Pig...that make you mouth watering.
Since Chui Wah does not have these Chinese Roasted Goose, Char Siu, Tai Hing has certain advantage over Chui Wah.
Price for a plate of Roasted Goose, (left side) is HKD$51.00, please a Red bean Ice Cream add another HKD$10.00. It is not cheap at all. But the Roasted Goose is nice, not having the Century oil smell, the meat is tender and juice. Recommended for a winter Lunch. The Char Siu is too healthy, too dry, So if you take Char siu, you can ask for more fat...or better don't eat it..

What is the best bowl of Cantonese brisket Beef noodle!? Or the lousy one!?



A bowl of beef noodle should be having tender and juicy beef, not too dark in colour as they might be too much time in stewing. Losing the natural favour of the beef, too soft will lose some chewy feeling of a beef, too hard tough will lose my tooth during chewing..
And the beef should not be too lean, they are prone to be best if they have 20% fat, not necessary those what has intense marbling and to producing a high percentage of oleaginous unsaturated fat.
The soup and the beef should not be salty; some of the Northern Chinese people may like the taste to be heavy, but heavy does not mean Salty… Only poor people eat salty food as they have to in order to keep their body fluid to be enough sodium Chloride or they will have problem in the muscle and they will not have the strength in handling tough heavy works.
We are not…the farmer, we do not eat too much salt for better health, we like good light and clear soup of the beef favour.
The beef should be good one, not necessary Angus, nor the five star Wagru, but they can not be a very tough one.
When we prepare the beef, we should out it in hot water for a 1-2 minutes… and rinse under cold water., the prepare the Recipe of the sauce for the beef.,
My mother taught me… deep fry the wok, put some soya bean sauce, a piece of Nam Yu, and some Chur Hou Paste from the Chinese grocery shop for sauce. Put a few pieces of Fa Chiu. And garlic, stir beef in pieces for a couple of minutes, reduce the fire and add some water just to cover the beef, Put a large price of Bing Tong (ice block sugar, a secret formula to make beef juicy and tender… then wait for the good smell of the beef to be generated in the whole building of where you are staying…
Well, back to this bowl of noodle, I called this is the Lousiest noodle I have never had in the year… The shop was packed with people, 90% Chinese shopper at Sogo, causeway bay, the shop is juts behind the Sogo near by Chui Wah Eatery.
The beef is very salty… the soup was salty too, they come with a spoon of Chinese Onion and some minced garlic had been deep fried… I think this is one of the non-Cantonese way to serve Beef noodle… But I have seen many times in many shops they serve this, I never had a good beef noodle, if you can tell one of the shops that serve good beef noodle, please tell me and I would love to go and try… We did not use the Chinese Onion at all, and I believe it will make a lousy noodle even worse.
One bowl of this noodle is HKD$26.00. Too expensive, The Toothpick in side the noodle was an accident that I dropped into it... Does not mean to humilate the shop…
Conclusion, I will never go again to this shop though they business is very good!

New Orleans Fine steak and Ribs Restaurant











We had a dinner celebration on what we have done yesterday for some successful sales proposal for one of the most important csutomers in Manila. This is New Orleans...switched from Tao Yuan that found no seats for us. The Oyster is local Philippines, tasted quite juicy and had a light brisk favour of Manila Bay Sea Water! The Clam Chowder soup was very thick, in fact it was too thick but was mouthwatering. Steak is OK! and They did real medium cooking, I did not had to purposely called for Medium Rare! It was about the right price as standard of Manila. The K9 Guard dog showed a smiling face to welcome my tender hands' massage for him. The place was in Resort World, opposite Manila Airport Terminal 3. It was a hot place for drinks and Dinner. And a lot of Hot Women too!!

Yellow Cab does not run in Hong Kong, The one I tasted was in Manila, the pizza can be very large as up to 18 inches. They make it quite healthy not like those heavy and thick pizza that stuffed with a lot of Cheese!

Curry Beef in Japanese Favour at Manila Airprot T1

Beside the Pork Chop, we can hve another Asian Favourite; Japanese Beef Cury Rice... It is almost the same as I took in Osaka some years back, but it is less Sweet as the Japanese. All depends on your taste buds. If I were able to select, I will add abit more sugar for the right favour. It is about P450.00
So next time you can try this Curry Beef at Terminal One of Manial Airport 2nd floor restaurant.

Jade Garden in Tsuen Wan, The Grandest Restaurant in Tsuen Wan

The Grandest Restaurant in Tsuen Wan.
This is the Jade Garden in Tsuen Wan MTR station.
Originally, it was the Caesar Cinema. And was converted from Cinema into Chiu Kwong Chun, and then some 4 years ago, Maxim group converted it from Chiu Kwong Chun into the Jade Garden. The dishes is typical Maxim standard… nothing special Cantonese! but the place is magnificent! Especially you go for a Marriage Dinner party!
You see the height of the restaurant! It is very huge like a Concert hall. I still remember I was one of the THREE people who watched the last showing movie on the last day it closed the movie business. I forget the name of the film, might be an X-rated movie… hmm!

The Front portion was actually the screen of the Caesar Cinema.

It is just 2 minutes walking distance away from Tsuen Wan MTR station Exit C.

Likely The best Dom Yam Kung in Cebu

There is a Thai restaurant at Marina Mall some 3 Km away from Cebu Airport. The Dom Yam Kung is exceptional delicious... You should order this when you come across this restaurant and if you like Thai food, but other dishes are not Authentic Thai at all.

The Most Expensive Hamburger in TST

Well, Why I said the most expensive Hamburger, it contains the meaning that it is not worth it.

For a Set of Hamburger which they said contains Australia Waygu Beef, some French Fries, and a Vanila Milk Shakes. It took me HKD$178.00 after 10% it is almost HKD$200.00

And It was not as good as Macdonal Hamburger. Well this is another Big hot Hi Tea selection restaurant located at Tsim Sha Tsui between Ocean Terminal and Ocean Centre. We have to queue up. It is BLT Berger.

I took a glass of hosue Red wife, total amount I paid was over HKD$350.00

Well, I think I will not go back again!

Toyaha Jumbo Water Melon

This is a Jumbo Water Melon imported from Japan, Available at Great Super Martket at Pacific Place. Price is HKD$1280.00, more expensive that the Square Water Melon. Taste? Well, I will not buy as that is for consumption of min, 10 people. I would rather go for a bottle of Rather Good Red wine at this price. Instead I bought some Japanese peach on left of the Water Melon. About HKD$80 each, that is rather affordabe for me.

This is a up floor Japanese Restaurant running by Japanese, as we know there have been a great difference between Japanese Sushi made by Japanese and Local Hongkonger.. yes, because there is no one who can make better Wanton Noodles that the Hong Konger… Same reason applies for Sushi and Sashimi.
There is daily fresh supply of Oyster, Japanese Crab, and Toro, if you want to taste a authentic Japanese cuisine. Hi Tea At Cafe Landmark Central

What do you expect that you can get with HKD$250 inclusive 10% service Charge for 2 persons Hi Tea in central of HK!? Well, this is it... The Carousel of Cakes, Dim Sum, Siu Mai with touches of Shark Fins and a Abalone as topping Spring Rolls is served hot.... Plus one two Drinks... at a Place where the Price of a square Foot of space is about HKD$40,000.00! Cheap! But you get to queue up and register... the line is quite long. Probably you can meet some of the City Celebrities and movies stars, note those with Sun Glasses!

Sam Dou Fish

In My humble opinion, Sam Dou could be the Most Delicious Steamed Fish.
This is the so Called “Sam Dou Fish” very hard to find, and very expensive, a fish of length of about 8” (weight about 10 taels) will cost about HKD$1,200.00 if you order at Prince Restaurant at Peking One, canton Road. Similar Fish you can find at Tao Yuan Mei Foo Sun Chuen at about HKD$800.00. and may be HKD$600 at Sam Sin Tsuen near Tsuen Mun. But usually these kinds of fish would not be easy to find.
And normally you have to order in advance one day at Prince restaurant,
So Far the best steamed fish is Prince as they use the virgin soya sauce mixed with water at certain ratio, put some chicken essence, sugar and stir under mild temperature. They use good quality oil and they service the soya sauce and oil in tow separate bowls. Instead on put it on the steamed fish.
If you like fish, you have to go for this.

Stinky Tofu is Typical Chinese Food, why it is South East Asian food!? Hong Kong has just Egg tart and French Toast? I like Thai food, part of the reason why my wives are. Thai. But Do you know the Yam Pla Too foo is so much tasteful which is better than the Som Tam and even Tom Yam Goong, but I could not find it out from the list.
Well USA is Winningest for 7 items, Thailand for 4. I have no question on Thailand as their food is fantastic, but USA! I doubt! USA has not much of its own cooking culture.
France, only the Croissant? China has just Peking Duck, which is one of my most dislike items out of ten, How about Hong Kong Roast goose!? Anyway, do not take it so seriously and do appreciate your taste and choose the best food you like.

Stop Eating Processed Meat

The World Cancer Research Fund (WCRF) completed a detailed review of more than 7,000 clinical studies covering links between diet and cancer. Its conclusion is: Processed meats are too dangerous for human consumption. Processed meats include bacon, sausage, hotdogs, sandwich meat, packaged ham, pepperoni, salami and virtually all red meat used in frozen prepared meals. As they are usually manufactured with certain amount of carcinogenic ingredient known as sodium nitrite, this is used as a color fixer by meat companies to turn packaged meats a bright red color so they look fresh. Sodium nitrite results in the formation of cancer-causing nitrosamines in the human body. And this leads to a sharp increase in cancer risk for those who eat them.
A 2005 University of Hawaii study found that processed meats increase the risk of pancreatic cancer by 67 percent. Another study revealed that every 50 grams of processed meat consumed daily increases the risk of colorectal cancer by 50 percent. Note that these cancer risks do not come from eating fresh, non-processed meats.
From Now on, stop eating these kind of food, or at least reduce, Stop all Can food meat like pork of beef, can soup with meat, they are all prone bad to your health...
Take a glass of lukewarm water n the morning as first thing to do after wake up…prior cleaning your teeth.
It helps to wash clean your bowels.
Do not take Ice cold water during meal as it solidify fat in your food in your body and gradually accumulating to change to bad cells as Cancer.
Cut Out extra fat meat, avoid chicken wing as usually this is where the steroid is injected.
The residual steroid will stay in your body for years.

A nice and cozy, quiet place at night under the Singaporean Wednesday moon. Service was good and the young waitresses had a great sense of humour talking with me…

We covered a lot of old chat, new news and common understanding of the life in Singapore, German and Hong Kong. The Good is good but I do not take much due to my high BMI…

Boon Tung Kee, Singapore

Boon Tung Kee has earned a lot of appreciation from the magazine and newspaper reporters of Singapore and Hong Kong. A lot of Movie Stars like Andy Lau extols their famous Steamed Chicken as merits best Singaporean Chicken. Situated along the Balistier Road, we had waited just for a whilst because of just two of us, other more than 2 persons may have to wait much longer time. That of the chicken is OK! But the meat was still a big harsh and tasteless. The steam pork on pickled vegetable was amazing, too healthy that almost the fat was cut out.  This dish does not look like oily.  Price was only SD$42.00 for two persons. Quite a good deal. HK Snob

Probably The Most Delicious Dish at Manila Airport

Not just me, friend of mine from Hong Kong, and some senior Colleagues from Singapore had the same comment, This Grilled Pork chop dish is likely, or I should say most probably the most delicious dish in Manila Airport.
It comes with two pieces of pork chops and side veggies, you would see some fat at the rim of the porkchop and slightly burned to become crunchy and a favour of charcoal scents.
Well, not too healthy usually I took part of the fat only, but I do take all the lean portion at the centre, it was not oily and that make you feel stuffed. The rice portion is small which is good for my small stomach. Next time when you come to this 2nd Floor of the airport, on the non-smoking side of this restaurant, Try…
Price is Peso 405. (HKD$80.00, USD$10.00 roughly)

Note: it take 20 mins to come.. if you are hurry, do try the Sanwiches.

Philippines Cuisine




Philippines food can be so nice if you go to the right place.., This is a famous restaurant in mid of Malate city. The environment is good, a band of three playing guitar I asked for the right mood of Stranger on the shore, A man and a woman, Summer of 42 and Roman Guitar! The food is likely going personal as if the taste for the fish would be better if we use Thai Chili sauce. The Dessert was amazing, sweet ripe mango was topped with layer of Vanilla Ice-cream and some sticky rice dumping.

You can eat the chicken in the chicken broth, as normally , we do not eat the chicken in the soupas it would be like the dried sugar cane, but this is not the case for the Pinoy Way.

I rate this is the best ever I had with Philippines Cuisine. So far...HK Snob

This is one of the Korean Barbacue restaurant in 7th Floor, Peking One, Tsim Sha Tsui.

There is certain Wagu Beef, Sea Food that you can prepare in front of you by yourself over the gas stove. Not a bad choice if you want to have some Korean Favour of Barbacue....

Price wise is approximately HKD$450 per head.

Tao Heung Guang Dong Restaurant



Tao Heung, an usual place for my dinner at Saturday evening. No matter Steam Boat or A la Carte. I like their soup, but knowing that they are not too good if we drink it too much.. Anyway, I think once in a week should be good for our body…Only one thing is that it would be hard to get a seat on Sunday if you go there after 7:30.

Las Paellas in Festival Mall, Alabang, Manila




"Las Paellas" is situated in Festival Mall of Alabang. I think the HK people would love the taste they have in the Beef stripes soup and the Seafood rice. Not too salty, not oily, natural material, amd using sticky rice, There are a lot of positive comments locally for this restaurant, Price is Low and food is clean. Imagine that it took is only HKD$240 for 4 persons including fruit juice, four dishes and 4 coffees! The environment is some what like those small Portuguese Restaurant in Macao. There are two probationary fans on top running very slowing... that causes me to feel drowsy and sleeping! That is why Spanish will close their shops at 2 to 3 in the afternoon for sleeping! Chef Mervyn Whitfield served and did his apprenticeship at the five-star prestige Grosvenor House Hotel, He graduated after five years’ as a Chef Touno. He then joined the famous Entertainment Group NEMS run by Brian Epstein, manager of the Beatles , Chef Mervyn was assigned to other famous groups like Gerry and the Peacemakes, Billy J. Kramer, Cilla Black, Cliff Bennet and The Beatles. After 8 years, Chef Mervyn opened his own restaurant, : the Casserole”, in Chelsea, London and opened his second : Le Bistro” in Knightbridge. Chef Mervyn has cooked for many famous people among them were Princess Diana, Fergie Duchess of York, Phil Collin, Pavarotti, Oliver Reed, and many others. Chef Mervyn has also been a chef at many European top Clubs and restaurants like Anabel’s, toured Argent, Jackie O and El Bontin to name a few. Today, he is married and has two kids. He settled in Manila since 1991. Running 5 restaurants and one of them is Sophia’s. It brought him his brand of cuisine.
